Homemade tortilla chips and guacamole for cheaters

Try to make these “homemade” tortilla chips and guacamole dip for a simple way to make something that looks more complicated than it is. Unfortunately, I don’t have exact recipes but really it’s so easy you could make it blindfolded.

Tortillas:

  • small flour tortillas
  • olive oil
  • kosher salt

*In the amount you want to serve. One tortilla=8 chips

01 | Preheat oven to 350 F.

02 | Cut the flour tortillas into small triangles. I usually cut them in half, stack them, and then cut them in fourths for eight chips. Try a pizza cutter if you want to do multiple at once.

03 | Brush a thin layer of olive oil on both sides of the chips and put them on a cookie sheet. Sprinkle the salt over the chips once you have laid them all on the pan.

04 | Bake chips in the oven for about 5 minutes or until golden in spots and crunchy. Keep a close eye on them,  because they cook quickly! If you’re feeling particularly motivated, turn them over once. If you let them turn brown all over, they’ll probably taste burnt.

Guacamole:

  • avocado(s)
  • some store bought salsa. A tomato-based, chunky salsa probably works the best.  Maybe pico de gallo?
  • <1/4 tsp lemon or lime juice (a sprinkle will do if you’re not making a lot)
  • pinch of salt to taste

*For the average 15 oz salsa container, I would guess that you need about 2 avocados, maybe three.

01 | Dice the avocado meat into small cubes. (How to cut an avocado). Or just scope it out and mush it up a bit.

02| In a bowl, combine desired amount of salsa with the cut avocado, a bit of the citrus juice, and a sprinkle of salt. Mix,  combining all of the ingredients to taste. This is not very scientific, to be on the safe side, I would start with half the container of salsa and find a ratio you like with the avocado, that way you can add more salsa if you need too.

Carissa made the salsa a while ago with left overs and it was delicious! If I had some salsa, I would probably make it, but unfortunately I don’t. I was reminded up this yummy and simple “recipe” since I’ve been on a taco salad kick recently (ground beef, Mexican cheese-mix, bleu cheese, iceberg lettuce, sour cream, homemade tortillas, and a dash of pepper).
