Misery with a hint of thyme

I’m sick. It feels awful. I have midterms and papers and no energy. I shouldn’t be blogging right now. But I thought I might do a good deed and maybe get some karma points by sharing a chicken soup recipe for sick people —meaning, it’s so easy to make, you can do it when you’re already sick.

I should note that I totally made this up on the fly so you’ll just have to bare with me and use your discretion.

Very Easy Chicken Noodle Soup
{Based off Alton Brown’s recipe, which is also simple}

  • 1/2 bag of egg noodles (6 oz), cooked al dente
  • 1 container of chicken broth (3 lbs?)
  • 1 chicken breast
  • 1/2-2/3 cup mixed frozen veggies (or chopped carrots & celery)
  • Onion (chopped or  powdered)
  • Garlic (chopped or powered
  • Spices:  rosemary, thyme, parsley...I just threw in stuff that was small and green, not very scientific. If Simon & Garfunkle sang about it, I’d say throw it in.
  • Pepper

01| Cook noodles & chicken. I just pan fried my chicken with some poultry seasoning on it, the chopped it into small pieces
02| Bring chicken broth to simmer/boil, throw in the veggies and spices to taste
03| After the noodles & chicken are done cooking, toss them in too.

Then eat and sulk about being sick. Mine turned out yummy, so good luck discretion cooking!

* I also bought a can of chicken noodle soup in case this turned out to be a disaster. I was going to dump it into my homemade soup to even it out.
